A well-known event, with some 5,000 visitors in recent years. The program includes herd rides to the mountain pastures, tastings and various events... Each year, a different region of France is honored

Below is the program for 2025 - Coming soon: 2026 Musical and gastronomic entertainment in the village on both days: local market, oven-baked bread, herd parade, various village activities, children's carousel..... Saturday program: - Montée à l'estive: 12 km hike to accompany a Salers herd into the mountains - Meeting at 7:15 am sharp in Pailherols - Price: 8 €/pers. (+ 12 yrs.) - 11:30am: Manade Martini: parade of Camargue bulls and horses; - from 12pm, opening of the "tartines" stand + meal (sausage/truffle); - from 2pm: opening of various stands - 2pm: "la ronde des burons": 10-km hike accompanied by a historian and storyteller (discovery of cultural, gastronomic and environmental heritage, cheese tasting) - Price: €8/person (over 12) -4pm Sepalteba choir in Pailherols church - 5:30pm: Manade Martini: parade of Camargue bulls and horses; - 6pm: parade and blessing of Bruno Amans' herd of Salers cows - 7pm: parade of flowered charts - from 8pm, dinner and show with Camargue singer Régine Pascal, accompanied by a horse trainer. Evening dance. All day long, bandas and musical entertainment. Sunday: - From 10 a.m., opening of the local market - 11am, parade and blessing of Bruno Amans' herd of Salers cows - 11:30 am, opening of the festival with Régine Pascale from the Martini manade; - 12:30 pm, cheesemaker's meal (22 €/adult - 10 €/under 12) - 2pm, foaling mares parade, -2:30 pm, Bruno Amans' herd of Salers cows march past to music. 3pm, parade of M Philippe Matière's herd of black-coated Salers cows. - at 3:30 pm, musical parade of GAEC Prunet's Salers herd - 16:00 sale and auction of pure-bred Salers steers and crossbred heifers -4:30 pm parade of floral floats -5:30pm Manade Martini -6:30 pm parade of floral floats -20:00 aligot sausage Musical entertainment all day and various stands Exhibitions of tractors, farm equipment and draught horses
